Notice the racks to the right? Those are for drying cod (torsk in Norwegian, either klippfisk, salted, or boknafisk, unsalted), and are called flake (hjell). Dried cod, aka bacalao, is a huge business here. And people do it for fun too, in other words, they actually make it for themselves, as you'll see later. These racks are empty at the moment.
