As I said, you can eat very well if you buy the stuff at the supermarkets, just get some good whole grained breads, some spreads of various types. Here we have some Laks (cold smoked salmon), butter, bread, caviar in a tube (not expensive kind, just a spread, make sure to get the kind that is all caviar, not the one with mayo mixed in). I see some pickled herring there too, that's really good. And some cheeses, the Geitost (goats milk, brown) cheese is really good. Eating out in Norway is VERY expensive, so it pays to just buy food at the markets and eat as many meals as you can manage with just bread and your spreads.
